Mint Salad with Oil and Vinegar Dressing

Presenting a fresh and flavorful salad to help get you through the warmer months.  The mint along with the radish really give this a unique flavor that you will not find in most salads.

The lettuce is from our garden.  The green onions and radishes were purchased from a CSA we use.  So everything is organic and everything is fresh.  This really makes a difference in the quality of flavor.


About 6 oz. torn lettuce

One chopped apple

One chopped orange

Two chopped green onions

Two thinly sliced radishes

Handful of chopped mint leaves

Toss all ingredients together.


1/3 cup apple cider vinegar

1/4 cup olive oil

4 tbs. sugar, agave nectar or honey (more or less per taste)

Combine in jar or bottle and shake well.

With minimal ingredients this salad is really simple and extremely healthy.  Depending on where you live most of this can come straight from your home garden.

With the gorgeous colors, and spunky taste you have to give it a try.

  1. This is my kind of food and during the cool spring we grow heaps of all those salad fav’s .. sadly the heat is coming and the lettuce is bolting but never mind, the cucumbers and tomatoes are growing! bet yours are too! c

  2. Have you come across all the different flavored mint plants? I saw pineapple, which looked appealing but I ended up getting the tangerine mint plant. It is really growing tall and I’ll have to chop some up for this recipe. Thanks for sharing!
